More Khichdi

SPICY MASALA KHECHDI 

1 vaadko chokha 

1/2 vaadko tuvar daar 

3 vaadka paani 

4 tbsp tel 

2 tsp ghee 

1/2 tsp jeero 

1″ taj jo tokdo chapti hing 

2 tbsp kaccha singdana 

1/4 tsp haldi 

1/2 tsp kaari mari powder 

1/4 tsp laving powder 

1 madhyam kaando chopped 

4 kadi lasan sliced (lasan = garlic; kadi=cloves) Leela marcha slit swaad anusaar  (Leela = Green, Swaad = Sawad=taste) 

1 tsp piselo aadu (ground ginger) 

1 madhyam batato (potato) diced 

1 madhyam gajar (carrot, diced)

1 madhyam beetroom (diced)

2 or 3 nilo beans

1/2 vaadko leela vatana (green peas) Meetho swaad anusaar 

Lal marcha powder swaad anusaar 

 

Bhanaayji Reet: 

Chokha-Tuvar daar bhegi kare 5-6 waar dhuteji.3 vaadka pani vaji baaju (side) me rakheji. Pressure cooker me tel ne ghee bhego kare garam thiye ter jeero vajejo. Haane taj jo tokdo ne singdana vajeja. Light brown thiye ter haldi, lavin powder, hing ,mari jo powder vajejo. Haane kaando vajejo.1 minute poy aadu, lasan, leela marcha vaji 1 minute saat dejo (saut). Haane potatoes, leela vatana, gajar, beans, beetroot,meetho, lal marcho vajejo. Made (All) mix karene chokha-daar paani bhego vajeji. meetho, lal marcho check kare ganejo.1 whistle vajaay cooker bhandh kare tharela danejo. 

 

Spicy Masala Khechdi taiyaar.

Kutchi chaay(buttermilk) , kadhi bhego khaai sako. 

SPICY MASALA KHECHDI 

1 cup rice 

1/2 cup tuvar daar 

3 cups water 

4 tbsp oil 

2 tsp ghee 

1/2 tsp jeera 

1″ cinnamon piece 

Pinch of asafoetida 

2 tbsp green peanuts 

1/4 tsp turmeric 

1/2 tsp black pepper powder 

1/4 tsp clove powder 

1 medium onion chopped 

4 cloves of garlic 

Green Chillis slit, as per taste 

1 tsp ground ginger 

1 medium sized potato (diced) 

1 medium sized carrot (diced)

1 small sized beet root (diced)

2 or 3 green beans

1/2 cup green peas 

Salt to taste 

Red chili powder to taste 

 

Method of Cooking: 

Wash rice and tuvar dhall together 5-6 times. Add 3 cups of water and keep aside. Put heel and oil together in the pressure cooker. When hot add jeera. Then add cinnamon piece and pea nuts. When light brown, add turmeric, clove powder, asafoetida, and pepper powder. Now add onion. After one minute add ginger, garlic and green chilies and saute for a minute. Thereafter add potatoes, green peas, salt, carrot, beet root and red chilies. Check salt and red chili. After one whistle close the flame and let it cool. 

 

Spicy Masala Khechdi is ready.

 

You can eat it with buttermilk or kadhi. 

 

FADEJI KHECHDI (CRACKED WHEAT KHICHDI) 

 

1 vaadko yellow moong dal 

3/4 vaadko fada(cracked wheat) 

1 vaadko cholelo ne cubed batato (potato) 

1 vaadko leela vatana 

1 vaadko cauliflower (nanda tokda) 

1 vaadko kaande ja cubes 

1 tbsp aadu-leela marcheji paste 

1/2 tsp mari ja dana 

1/2 tsp haldi 1 tsp lal marcha powder(optional) 

Meetho swaad anusaar 

2 1/2 -3 vaadka paani 

 

Waghaarela kare

1 1/2 tbsp desi ghee 

1″ taj jo tokdo 

3 laving 

1 tsp jeero 

1/2 tsp hing 

 

Bhanayji Reet

Yellow mong dar ne fada bhega kare 4-5 waar paani se dhuteja. 2½-3 vaadka paani vaji kare pase me rakhejo. Hekde pressure cooker me ghee vaji ,garam thiye ter jeero, taj ,laving ne hing vajejo. Poy batata, vatana, cauliflower, kaando, mari ja dana, haldi, lal marcho, aadu-marcheji paste vaji saatdejo. Haane mong dar-fada paani bhego vaaji ne meetho vajejo. 2-3 whistles poy cooker bhanth kare vajejo. Thadho thiye ter khole ne extra ghee vaji dahi bhego khaai sako. Alag alag saak se ne Fibre se bhareli (full), zero cholesterol waari hi Khechdi swaadist lagdhi. 

FADEJI KHECHDI (CRACKED WHEAT KHICHDI) 

 

1 cup yellow moong dal 

3/4 cup fada (cracked wheat) 

1 cup skinned and cubed potato 

1 cup green peas 

1 cup cauliflower (small pieces) 

1 cup onion cubes 

1 tbsp ginger-green chili paste 

1/2 tsp black pepper seeds 

1/2 tsp turmeric 

1 tsp red chili powder (optional) Salt to taste 

2 1/2 -3 cups water 

 

For Waghar: 

1 1/2 tbsp desi ghee 

1″ cinnamon 

3 cloves 

1 tsp jeera 

1/2 tsp asafetida 

 

How to Make

Wash moon dhall and cracked wheet together 4-5 times in water. Add 2 1/2 -3 cups water and keep aside. In a pressure cooker add ghee and when hot add jeera, cinnamon, cloves and asafetida. Thereafter, add potato, green peas, cauliflower, onion, black pepper seeds, turmeric, red chili powder, ginger-green chili paste and sauté. Now add moong dhall, cracked wheat and water together. Switch off after 2-3 whistles. After cooling add the extra ghee. It can be eaten with curd. With different vegetables filled with fibre having zero cholesterol this khechdi will be tasty.

In contrast to the above Kutchi preparations we give below what is called Khichda, a Bohri delicacy. It’s made of Kathod (6 Mixed dhals)
